Berry Topped Cupcakes
These cupcakes are as healthy as cupcakes can get. The topping is a fat-free pudding mixture and fresh fruit.

Ingredients:

1 pkg 2-layer size white cake mix
1 cup fat free milk
1 pkg 4-serving size Jello Vanilla flavor fat free sugar free instant reduced calorie pudding/pie filling
8 oz Cool Whip Lite whipped topping, thawed
24 small strawberries, stems removed and each cut into 5 slices
1/2 cup blueberries

Directions:
1. Prepare cake batter as directed on package for reduced fat cupcakes

2. Spoon evenly into 24 paper-lined medium muffin cups

3. Bake as directed on package

4. Cool 10 mins and remove from pans to wire racks

5. Cool completely

6. Pour milk into large bowl

7. Add dry pudding mix and beat with wire whisk 2 mins or until well blended

8. Gently stir in whipped topping

9. Spread tops of cupcakes with pudding mixture

10. Arrange 5 of strawberry slices on top of each cupcake to resemble a star

11. Fill center of stars with blueberri
Ground Turkey Onion Burgers
A healthy twist on an American favorite!

Ingredients:

1 whole sweet vidalia onion
1 1/4 lb fresh ground turkey
1 1/2 tsp garlic powder
2 tsp parsley flakes
1 tsp sugar
1 to 1 1/4 tsp salt
2 Tbsp extra virgin olive oil
hamburger buns
BBQ sauce
Sliced American cheese
tomato/lettuce/any other desired toppings

Directions:

1. Peel and chop onions coarsely
2. Heat 2 Tbsp olive oil in skillet on medium heat
3. Add onions, sugar, a pinch of salt, garlic powder, and black pepper to taste
4. Stir onions and allow them to cook till light brown edge forms
5. Remove pan from stove/set aside
6. Add garlic powder, parsley flakes, and salt then mix thoroughly together with ground turkey
7. Add cooked onions to ground turkey and mix well
8. Form meat into 4-5 patties
9. Grill as desired
10. Build your burger with barbeque sauce on both sides of bun then add cheese, lettuce, tomato, and any other desired condiments
